Scotland's Burns Night centrepiece. A well-made haggis is oats, oatmeal, sheep's pluck and beef suet, seasoned heavily with pepper, and steamed slowly in its casing. Served with mashed swede (neeps) and mashed potato (tatties), and a nip of whisky.
Cranachan
A Scottish harvest pudding of toasted oatmeal, softly whipped cream loosened with heather honey and whisky, and layers of ripe raspberries. Pinhead (steel-cut) oats give it the essential crunch.
Cock-a-Leekie Soup
A very old Scottish soup, sometimes served at Burns suppers before the haggis. Chicken and leek simmer slowly together; a handful of prunes goes in near the end for a strange, wonderful sweetness against the salt.
Scottish Shortbread
A Scottish shortbread should be sandy, crumbling and pale gold, not brown. The classic ratio is one part sugar to two parts butter to three parts flour, with a little rice flour or cornflour to lighten the texture.
Scotch Eggs
Soft-boiled egg wrapped in seasoned sausagemeat, breadcrumbed and deep-fried. A picnic classic, cut in half to show the just-set yolk.
Beef Stovies
Traditionally made from Sunday roast leftovers. Beef, onion and potato stew slowly in dripping until the potatoes half-collapse into a rough, buttery mash.
Dundee Cake
A rich Scottish fruit cake from the marmalade town of Dundee, lighter than a Christmas cake and crowned with concentric rings of blanched almonds.
Clootie Dumpling
A Scottish Highland steamed fruit pudding. Named for the 'cloot' (cloth) it is cooked in, which gives it a thin dark skin. Served at Hogmanay with hot custard.
Tattie Scones
Soft potato flatbreads cooked on a hot griddle. A cornerstone of the Scottish breakfast — buttered while warm, or fried in bacon fat and topped with an egg.
Arbroath Smokies with Butter
Small haddock hot-smoked over hardwood in the fishing town of Arbroath on the Angus coast. They arrive ready to eat; a brief warm-through with butter is all that is needed.
