Laverbread Cakes

Small patties of laverbread mixed with oatmeal and pan-fried until crisp at the edges. A classic South Welsh breakfast dish, often served with bacon.

Ingredients

200 g prepared laverbread

4 tbsp medium oatmeal

1 small onion, very finely chopped

1 pinch freshly ground black pepper

3 tbsp bacon fat or vegetable oil

4 rashers streaky bacon, to serve

Method

    Mix the laverbread with the oatmeal, onion and pepper to a firm mixture.

    Shape into 8 small patties, about 1.5 cm thick.

    Heat the fat in a heavy pan and fry the bacon until crisp; set aside.

    Fry the laverbread cakes in the bacon fat for 3–4 minutes each side until crisp and burnished.

    Serve immediately with the bacon and a wedge of lemon.

Cook's notes

The mixture is soft — refrigerate for 15 minutes if it is hard to shape.
