Boxty Pancakes
An Irish potato pancake made from both raw grated potato and cooked mashed potato — the combination gives them their unique dense, chewy character. 'Boxty on the griddle, boxty on the pan; if you can't make boxty, you'll never get a man.'
Ingredients
250 g raw potatoes, peeled
250 g cooked mashed potato, cold
150 g plain flour
1 tsp baking powder
1 tsp fine sea salt
200 ml buttermilk
1 egg, beaten
3 tbsp butter or bacon fat, for cooking

Grate the raw potatoes finely and squeeze out as much liquid as possible in a clean cloth.

Mix the grated raw potato with the cold mash, flour, baking powder and salt.

Whisk the egg with the buttermilk, then stir into the potato mixture to a thick batter.

Melt a knob of butter on a hot griddle and drop the batter in generous spoonfuls, flattening slightly.

Cook for 3–4 minutes each side until bronzed and cooked through. Eat straight from the pan with butter and bacon.

Squeeze the raw potato hard — wet mixture makes stodgy pancakes.
